Making this soup in a crockpot is easy to plan ahead and conquer. Roughly chop and cut all the veggies and fruit and place in a crockpot. You do not have to be perfect with the shape or size as the end result is blended. Place the 4 cloves of garlic, 1 granny smith apple, 1 medium butternut squash, 1 white onion, and sprigs of sage all chopped in the crockpot with 2 cups of vegetable stock. Let it cook for roughly 6 hours and than stir in 1/2 cup of unsweetened coconut milk. Blend all the ingredients in a blender until smooth. Add seasoning to taste! Easy as Sunday morning.
